Buy a spaghetti squash. Buy a yellow onion. Buy a pound of sweet (or spicy if that’s your thing!) Italian sausage. Buy a jar of pizza sauce. Buy a carton of eggs. And then if you don’t have it in your pantry already, buy a shaker of basil.
Then tie your apron. And get ready.

I found this recipe on paleomg.com this summer and I’ve been making it at least once a week every since. It’s a little bit pizza. It’s a little bit spaghetti. It’s a little bit Paleo Heaven. It’s so easy to make and we all love it, even the boys.
Juli Bauer’s Almost 5 Ingredient Pizza Spaghetti Pie
- 1 large spaghetti squash
- 1 pound Italian sausage
- 1/2 yellow onion, diced
- 1 cup pizza sauce (no sugar added)
- 1 tsp dried basil
- salt and pepper to taste
- 3 eggs, whisked
Preheat your oven to 400 degrees. Grease an 8″x8″ Pyrex with coconut oil, set aside.
Cut your spaghetti squash in half lengthwise. Scoop out all the seeds in both halves. Place one half of the squash cut-side down into one inch of water in a 9″x13″ Pyrex. Microwave for 7-9 minutes until the skin is soft when you press on it.
Shred the squash into little spaghetti “noodles” with a fork and throw them into your greased Pyrex. Do the same thing with the other half of your spaghetti squash.
Cook your onions and sausage over medium heat until the sausage is brown and the onions are soft, breaking up the sausage with a spoon as they cook together.
Add your pizza sauce and your basil, stirring everything together. Add salt and pepper to taste.
Add that sausage mixture to the 8x 8 dish and mix well with the spaghetti squash.
Add the whisked eggs to the dish and mix everything together until you can no longer see the eggs. Throw it in the oven for one hour. The mixture should form a slight crust (the best part!) that doesn’t give when you press on it in the middle.
Let it rest for five minutes before digging in.

You could add any meat or veggie pizza topping you like–pepperoni, mushrooms, black olives, whatever. We’ve tried them all and they’re all good on it. Every time I have this for dinner I always look forward to eating the leftovers the next morning for breakfast. It’s really that good–even the next day. Enjoy.
